Yesterday I made one of my most favorite family meals ever. I grew up eating it and I don’t know if it has a proper name but we just call it “ham, cabbage, carrots, potatoes, and green beans”. And that’s exactly what it is, plus an onion and some water. It doesn’t sound very exciting, but when you put it all together and simmer it on the stove for a couple of hours, something magical happens to the flavors and it smells so good. Served with a slice of homemade cornbread and you have yourself a super easy budget friendly meal. Even my kids like it!
Everything goes into a huge pot add water and simmer for a couple hours – it’s that easy.

I only wish I had green beans from the garden, but last year was a bad year for me bean-wise. First off, I picked the wrong kind of bean seeds to plant. They were tough and stringy and the few that grew were terrible. The goats loved them though, so they didn’t go to waste. Second, the drought was so bad that I gave up trying to keep some things going and the bad beans were at the top of that list. Here’s hoping for a better bean harvest this year!
