I decided I have had enough of terrible pizza chain pizza and it’s time to try homemade pizza again. Homemade pizza is usually a hit or miss creation for me. When it’s good, it’s very good. When it’s bad, it’s terrible and I swear off making it ever again. I think the problem is that I KNOW the flavor I’m going for because I tasted it once in a pizza long long ago but I can’t for the life of me reproduce that sauce. Slightly sweet, a little kick to it, and there are green peppers that give it a super flavor.
But it is winter in Ohio and I’m bored so I used Google and found this blog post and recipe from “The Pizza Lab” at SeriousEats.com (seriously, how great is it that they have a pizza lab stie?) that looked like what I have been trying to create. That is my project for today and I will update when this masterpiece is done. The dough is rising and the sauce is cooking down and I can hardly wait.
And now for the random part of this blog. For the life of me I cannot be in the kitchen and not turn it into a disaster area. What is up with that? I will cover every single surface of the kitchen for even a simple recipe. It boggles my mind. I try to keep up with dishes as I dirty them, but inevitably the drying rack gets full so I have to start drying and putting things away and I get distracted trying to keep everything tidy and usually end up burning something.
I am a little envious of people who can cook and keep it clean at the same time like TV chefs who have a place for everything. It’s like they have kitchen fairies. Sadly, I do not have kitchen fairies that clean up as I work. And that’s OK. As long as the food I cook comes out great – and it usually does – then I guess a little mess (OK, BIG mess!) is probably just something to laugh at.
I like to cook but I don’t like to be in the kitchen so I tend to go feast or famine – either making preps for a few meals all at once or scrambling to make something last minute because I put off thinking about it. That is something I need to work on and I am trying to get my act together this year.

That recipe is the best I’ve ever tried. It is almost exactly the taste I was looking for. The crust was perfectly crispy yet chewy but not tough at all. This is THE ONE! I also love that I can mix the dough and then just stick in in the fridge for a couple days until I’m ready to use it.
*Note – it seems some of the instructions were left out from the recipe so I just went with instructions for their Pan Pizza – easy peasy!
